PRECIOUS WHITE TRUFFLE

TUBER MAGNATUM PICO

Smooth yellow to green outer rind, light brown to light hazelnut pulp with numerous and fine light veins. It gives off an intense and delicate perfume. The white truffle is considered the truffle par excellence, its scent is unmistakable. Among the truffle species it is certainly the most precious.

FINE BLACK TRUFFLE

TUBER MELANOSPORUM VITT

Black and wrinkled external rind with minute warts and purplish black pulp when ripe with white, fine and numerous veins. It gives off a pleasant and delicate scent combined with a characteristic taste that makes it the finest among black truffles. After the white truffle it is considered the most commercially valuable and is one of the protagonists of international cuisine. It has a black skin and the interior is dark with white veins.

WINTER BLACK TRUFFLE

TUBER BRUMALE VITT

Less pleasant than the precious black truffle, with which it is sometimes confused due to inexperienced noses and eyes, the Tuber Brumale Vittadini, or Tartufo Moscato is a purely winter underground mushroom, which accompanies housewives and chefs in the post-Christmas period.

CROCHED BLACK TRUFFLE

TUBER UNCINATUM CHATIN

It belongs to the same species as the summer truffle, however its scent is stronger. The exterior is black, the interior is hazelnut. The hooked truffle is like cheese on macaroni: it really goes well with everything. Delicate taste, pleasant smell, not excessively high price, large sizes, all characteristics that make this underground mushroom a product with which you can really indulge and have fun in the kitchen

WHITE TRUFFLE

TUBER BORCHII VITT

The bianchetto truffle is an underground mushroom that we like to define as “dignified”, with character. It fits perfectly between a simple black truffle and a multi-starred white truffle. This truffle is known as "marzuolo", given the period of collection. Its peculiarity is the strong scent as well as the decidedly garlicky taste.

BLACK SUMMER TRUFFLE

TUBER AESTIVUM VITT

Unlike its "uncinato" brother (winter scorzone), it is less valuable and can be found in the spring-summer period. The main feature of summer scorzone is that it is extremely resistant to perishable conditions. So the summer truffle or scorzone looks very similar to the black truffle. Among the truffle species it is the most widespread. Its unmistakable scent is sweet, pleasant and has a delicate taste.
